Apple Oatmeal Breakfast Bake

This healthy breakfast bake is simple, delicious, and packed with natural sweetness—no added sugar or flour needed!

Ingredients:

  • 1 cup (100 g) rolled oats
  • 3 medium apples, grated
  • 1/2 cup (120 ml) water
  • 1 banana, mashed
  • 3.5 oz (100 g) dried cranberries, rinsed in hot water
  • 3.5 oz (100 g) raisins, rinsed in hot water
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup (50 g) your favorite nuts, chopped

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish (about 8×8 inches) with a little oil or line it with parchment paper.
  2. Prepare the Oats and Apples: In a large bowl, mix the rolled oats with the grated apples. The apples will provide moisture, so no additional liquid is needed yet.
  3. Add the Wet Ingredients: Add the mashed banana, water, and eggs to the oat and apple mixture. Stir well until everything is well combined.
  4. Mix in the Dried Fruits: Gently fold in the rinsed cranberries and raisins. These add natural sweetness and texture to the bake.
  5. Incorporate the Dry Ingredients: Sprinkle the baking powder over the mixture and stir until evenly distributed. Add the ground cinnamon, if using, for extra flavor.
  6. Add the Nuts: Fold in the chopped nuts, giving the mixture a nice crunch.
  7. Bake: Pour the mixture into the prepared baking dish. Smooth out the top with a spatula. Bake for about 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
