Instructions:
- Preheat the oven to 350°F (180°C) and lightly grease a baking dish with a bit of butter.
- Prepare the oatmeal: In a medium-sized bowl, pour the warm milk over the oatmeal. Let it sit for 5-10 minutes to soften the oats.
- Mix the ingredients: In another bowl, whisk the eggs, melted butter, vanilla extract, and cottage cheese (if using). Add the softened oats and stir to combine.
- Add the apples: Fold in the chopped apples, cinnamon, honey or maple syrup, and a pinch of salt if desired.
- Bake: Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 25-30 minutes, or until the top is golden and the center is set.
- Serve: Let the baked oatmeal cool slightly before serving. It can be enjoyed warm or cold. You can drizzle extra honey or add a dollop of yogurt on top for extra richness.
