Banana Berry Ice Cream

Ingredients:

  • 3 ripe bananas
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tsp vanilla extract (optional)
  • 1 tbsp almond or peanut butter (optional for extra creaminess)

Instructions:

  1. Prepare the Fruit:
    • Peel the bananas and slice them into thin rounds.
    • Wash and dry the mixed berries.
  2. Freeze the Fruit:
    • Place the banana slices and mixed berries on a baking sheet lined with parchment paper.
    • Freeze them for at least 2-3 hours or until they are solid.
  3. Blend the Frozen Fruit:
    • Remove the frozen bananas and berries from the freezer.
    • Place them in a food processor or a high-powered blender.
  4. Blend Until Smooth:
    • Start blending the frozen fruit. You may need to stop and scrape down the sides a few times.
    • If using, add the vanilla extract and nut butter for extra flavor and creaminess.
    • Continue blending until the mixture is smooth and creamy. This may take a few minutes, but be patient.
  5. Serve Immediately or Freeze for Later:
    • You can serve the ice cream immediately for a soft-serve texture.
    • If you prefer a firmer ice cream, transfer the mixture to an airtight container and freeze for an additional 1-2 hours.
  6. Enjoy!
