Banana Peel Honey Recipe

Ingredients:

  • 4 ripe banana peels (organic preferred)
  • 1 cup of sugar (you can use brown, coconut, or regular sugar)
  • 1 ½ cups of water
  • 1 tbsp of lemon juice
  • 1 tsp of cinnamon (optional, for added flavor)
  • ½ tsp of vanilla extract (optional)

Instructions:

  1. Prepare the banana peels:
    Wash the banana peels thoroughly to remove any dirt or pesticides. Cut the peels into small strips or pieces.
  2. Boil the peels:
    In a medium saucepan, add the water and banana peels. Bring to a boil, then lower the heat and let it simmer for about 20-30 minutes until the peels become soft.
  3. Strain the liquid:
    Once the peels are soft, strain the liquid into a separate container and set the peels aside (you can discard or compost them).
  4. Add sugar and lemon:
    Pour the strained banana peel water back into the saucepan. Add the sugar and lemon juice. Stir continuously over medium heat until the mixture thickens to a syrup-like consistency (this can take about 20-30 minutes).
  5. Flavoring (optional):
    Add cinnamon and vanilla extract to the honey for extra flavor. Stir well and continue to cook for another 5 minutes.
  6. Cool and store:
    Once the mixture reaches a honey-like texture, remove from heat and let it cool. Transfer your homemade banana peel honey into a sterilized jar and store it in the refrigerator.
