Ingredients:

  • 8 chicken pieces (bone-in or boneless)
  • 1 large onion (finely chopped)
  • 1 tsp cumin seeds (jeera)
  • 1 tsp garam masala
  • 1 tsp coriander powder (dhania)
  • 2 tbsp vegetable oil (or any cooking oil)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 2 tomatoes (chopped)
  • 2 potatoes (optional, diced)
  • 1 carrot (optional, sliced)
  • 2 cups chicken broth or water
  • Salt, to taste
  • Fresh coriander leaves (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken pieces with salt and set aside.
  2. Heat the Oil:
    • In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds (jeera) and let them sizzle for about 30 seconds until fragrant.
  3. Add the Onion:
    • Add the finely chopped onion and cook until golden brown, stirring occasionally, about 5-7 minutes.
  4. Add Garlic & Ginger:
    • Add the minced garlic and grated ginger. Cook for 1-2 minutes until aromatic.
  5. Add Spices:
    • Add the garam masala, coriander powder (dhania), and a pinch of salt. Stir for 1 minute to toast the spices.
  6. Add Tomatoes:
    • Stir in the chopped tomatoes and cook until they soften and release their juices, about 5 minutes.
  7. Add Chicken & Vegetables:
    • Add the chicken pieces to the pot and sear them on all sides until slightly browned.
    • If using potatoes or carrots, add them now. Stir everything together.
  8. Add Broth:
    • Pour in the chicken broth or water, ensuring the chicken is mostly covered. Bring to a simmer.
  9. Cook the Stew:
    • Cover the pot and let the stew simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. Stir occasionally.
  10. Adjust Seasoning:
    • Taste and adjust seasoning with salt, or more garam masala if needed.
  11. Garnish & Serve:
    • Garnish with fresh coriander leaves and serve hot with rice, roti, or bread.
