Ingredients:
- 8 chicken pieces (bone-in or boneless)
- 1 large onion (finely chopped)
- 1 tsp cumin seeds (jeera)
- 1 tsp garam masala
- 1 tsp coriander powder (dhania)
- 2 tbsp vegetable oil (or any cooking oil)
- 3 cloves garlic (minced)
- 1 inch ginger (grated)
- 2 tomatoes (chopped)
- 2 potatoes (optional, diced)
- 1 carrot (optional, sliced)
- 2 cups chicken broth or water
- Salt, to taste
- Fresh coriander leaves (for garnish)
Instructions:
- Prepare the Chicken:
- Season the chicken pieces with salt and set aside.
- Heat the Oil:
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds (jeera) and let them sizzle for about 30 seconds until fragrant.
- Add the Onion:
- Add the finely chopped onion and cook until golden brown, stirring occasionally, about 5-7 minutes.
- Add Garlic & Ginger:
- Add the minced garlic and grated ginger. Cook for 1-2 minutes until aromatic.
- Add Spices:
- Add the garam masala, coriander powder (dhania), and a pinch of salt. Stir for 1 minute to toast the spices.
- Add Tomatoes:
- Stir in the chopped tomatoes and cook until they soften and release their juices, about 5 minutes.
- Add Chicken & Vegetables:
- Add the chicken pieces to the pot and sear them on all sides until slightly browned.
- If using potatoes or carrots, add them now. Stir everything together.
- Add Broth:
- Pour in the chicken broth or water, ensuring the chicken is mostly covered. Bring to a simmer.
- Cook the Stew:
- Cover the pot and let the stew simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. Stir occasionally.
- Adjust Seasoning:
- Taste and adjust seasoning with salt, or more garam masala if needed.
- Garnish & Serve:
- Garnish with fresh coriander leaves and serve hot with rice, roti, or bread.
