Spiced Blackened Salmon with Creamy Spinach and Parmesan Filling
Ingredients:
- 4 skinless salmon fillets (about 6 oz each)
- 2 cups fresh spinach
- ½ cup cream cheese (softened)
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- Lemon wedges (for garnish)
Directions:
- Preheat the oven to 375°F (190°C).
- Sauté the spinach: Heat the olive oil in a skillet over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted. Remove from heat and let it cool slightly.
- Prepare the filling: In a medium bowl, mix the sautéed spinach with the softened cream cheese, grated Parmesan cheese, and season with salt and pepper. Stir until well combined.
- Stuff the salmon: Using a sharp knife, carefully cut a slit into the side of each salmon fillet to create a pocket. Fill each pocket with the spinach mixture.
- Season the salmon: Evenly sprinkle the Cajun seasoning on both sides of the salmon fillets.
- Sear the salmon: Heat a large ovenproof skillet over medium-high heat. Place the salmon fillets in the skillet and sear for 2-3 minutes on each side, until they are nicely browned.
- Bake the salmon: Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flaky.
- Serve: Plate the salmon and garnish with lemon wedges. Enjoy your blackened salmon with a creamy, flavorful filling!
