Spiced Blackened Salmon with Creamy Spinach and Parmesan Filling

Ingredients:

  • 4 skinless salmon fillets (about 6 oz each)
  • 2 cups fresh spinach
  • ½ cup cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • Lemon wedges (for garnish)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the spinach: Heat the olive oil in a skillet over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted. Remove from heat and let it cool slightly.
  3. Prepare the filling: In a medium bowl, mix the sautéed spinach with the softened cream cheese, grated Parmesan cheese, and season with salt and pepper. Stir until well combined.
  4. Stuff the salmon: Using a sharp knife, carefully cut a slit into the side of each salmon fillet to create a pocket. Fill each pocket with the spinach mixture.
  5. Season the salmon: Evenly sprinkle the Cajun seasoning on both sides of the salmon fillets.
  6. Sear the salmon: Heat a large ovenproof skillet over medium-high heat. Place the salmon fillets in the skillet and sear for 2-3 minutes on each side, until they are nicely browned.
  7. Bake the salmon: Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flaky.
  8. Serve: Plate the salmon and garnish with lemon wedges. Enjoy your blackened salmon with a creamy, flavorful filling!

This dish pairs beautifully with roasted vegetables or a light salad.
