Ingredients:
- 2 ripe bananas
- 1 cup rolled oats
- 1/4 cup peanut butter (or any nut butter)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon (optional)
- A pinch of salt
- 1/4 cup chocolate chips or raisins (optional)
Instructions:
- Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Blend: Add the ripe bananas, rolled oats, peanut butter, honey or maple syrup, vanilla extract, cinnamon, and salt into a blender. Blend until the mixture is smooth and well combined.
- Add-ins: If using chocolate chips or raisins, fold them into the mixture after blending.
- Shape: Scoop out spoonfuls of the batter and place them onto the prepared baking sheet, flattening them slightly with the back of a spoon.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges.
- Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
