- 4 cups broccoli florets, chopped

- ½ teaspoon mustard powder (optional)

- Pinch of cayenne pepper or paprika (optional for heat)
Instructions:
- Sauté the Aromatics
In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes, stirring occasionally until fragrant. - Make the Roux
Sprinkle the flour over the onion and garlic mixture, stirring continuously to form a roux. Cook the flour for 2-3 minutes to remove the raw taste, but avoid browning it. - Add Broth
Slowly whisk in the chicken or vegetable broth, ensuring there are no lumps. Let the mixture simmer until it thickens slightly, about 3-4 minutes. - Add the Broccoli
Stir in the chopped broccoli florets and cover the pot. Cook for 8-10 minutes, or until the broccoli is tender but still vibrant green. - Blend (Optional)
If you prefer a smoother texture, use an immersion blender to blend part of the soup. You can blend all or just a portion to leave some broccoli chunks for texture. - Add Dairy and Cheese
Reduce the heat to low and stir in the half-and-half (or whole milk). Gradually add the grated cheddar cheese in small handfuls, stirring until the cheese melts completely. Make sure the soup doesn’t boil once you’ve added the cheese. - Season
Add mustard powder, salt, pepper, and cayenne pepper or paprika if using. Taste and adjust the seasoning as needed. - Serve
Ladle the soup into bowls, and garnish with extra cheese, croutons, or a sprinkle of paprika. Serve with warm bread or a side salad.
