Ingredients:
- 1/3 head of cabbage (green or white)
- 1/3 head of red cabbage
- 1/4 teaspoon salt (for green cabbage)
- 1/4 teaspoon salt (for cucumbers)
- 1-2 cucumbers
- 1/2 onion (red or white, finely chopped)
- 1 teaspoon rice vinegar (or apple cider vinegar)
- 1 carrot (grated)
- 20g walnuts (roughly chopped)
Instructions:
- Prepare the Cabbage:
- Finely shred both the green and red cabbage. Place them in a large bowl.
- Sprinkle 1/4 teaspoon of salt over the cabbage and gently massage the cabbage with your hands for about 1-2 minutes to soften it.
- Prepare the Cucumbers:
- Thinly slice the cucumbers. Sprinkle with 1/4 teaspoon of salt and let them sit for 5-10 minutes. This helps draw out excess moisture.
- After 10 minutes, drain the cucumbers and pat them dry with a paper towel.
- Prepare the Carrot and Onion:
- Grate the carrot and finely chop the onion.
- Add both the carrot and onion to the bowl with the cabbage.
- Add Cucumbers and Dressing:
- Add the drained cucumber slices to the cabbage mixture.
- Drizzle the salad with 1 teaspoon of rice vinegar.
- Toss and Serve:
- Gently toss all the ingredients together until well mixed.
- Sprinkle the chopped walnuts on top for added crunch and flavor.
Tips:
- You can add a little olive oil or sesame oil for extra richness.
- Serve immediately or let it chill for 15-30 minutes to allow the flavors to meld.
