  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1/4 cup vegan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Caramelize the onions:
    • Heat olive oil in a large skillet over medium heat.
    • Add the sliced onions and a pinch of salt.
    • Cook, stirring occasionally, until the onions are soft and golden brown, about 25-30 minutes.
    • Add the balsamic vinegar and brown sugar, and cook for an additional 5 minutes until the onions are caramelized and sticky.
    • Stir in the thyme leaves and season with salt and pepper to taste. Remove from heat and let cool slightly.
  3. Prepare the tart base:
    • Roll out the thawed puff pastry on a lightly floured surface to fit your tart pan or baking sheet.
    • Transfer the puff pastry to the pan or sheet, trimming any excess dough.
  4. Assemble the tart:
    • Evenly spread the caramelized onions over the puff pastry, leaving a small border around the edges.
    • If using, sprinkle the vegan cheese over the onions.
  5. Bake the tart:
    • Place the tart in the preheated oven and bake for 20-25 minutes, or until the puff pastry is golden and crispy.
  6. Garnish and serve:
    • Let the tart cool slightly before slicing.
    • Garnish with fresh basil if desired.
