Ingredients:
- 4 large eggs
- 1.5 cups granulated sugar (225 g)
- 1 cup milk (200 ml)
- 1 cup vegetable oil (200 ml)
- 2.5 cups all-purpose flour (300 g)
- 2 packets baking powder (20 g)
- 1 packet vanilla (5 g)
- 2 cups grated carrots
- 1 cup walnuts, chopped
- 1 teaspoon ground cinnamon
Instructions:
- Prepare the Oven: Preheat the oven to 350°F (175°C). Grease and flour a cake pan or line it with parchment paper.
- Mix Wet Ingredients: In a large mixing bowl, whisk the eggs and sugar together until the mixture is light and fluffy. Add in the milk and oil, and mix well.
- Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, vanilla powder, and cinnamon.
- Add Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, stirring until just combined.
- Add Carrots and Walnuts: Gently fold in the grated carrots and chopped walnuts until evenly distributed throughout the batter.
- Bake: Pour the batter into the prepared cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!
