Cauliflower Steaks: The Hearty “Steak” Alternative You’ll Love

Move over portobellos, there’s a new contender in town for the title of “best veggie steak”! Roasted cauliflower steaks are a delicious and satisfying way to enjoy this versatile vegetable. They’re naturally low-carb, packed with nutrients, and surprisingly filling. Plus, they’re incredibly easy to prepare!

Ingredients:

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • Optional Toppings (choose your favorites!):
    • Grated parmesan cheese
    • Chopped fresh herbs (parsley, thyme, or rosemary)
    • Lemon zest
    • Marinara sauce and vegan cheese (for a “pizza” twist)
    • Pesto or chimichurri sauce

Method:

  1. Preheat Your Oven: Crank up the heat to 425°F (220°C). This high temperature ensures the cauliflower steaks get nice and caramelized on the outside while remaining tender on the inside.

  2. Prep the Cauliflower: Wash and dry the head of cauliflower. Carefully cut the cauliflower into 1-inch thick “steaks” from the core. You should end up with 2-3 steaks, depending on the size of the cauliflower. Reserve any leftover florets for another recipe (roasted cauliflower florets with a drizzle of olive oil and spices are a great side dish!).

  3. Season to Perfection: In a small bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Brush the cauliflower steaks generously with the mixture, making sure to coat them evenly.

  4. Roast Time! Place the seasoned cauliflower steaks on a baking sheet lined with parchment paper. This helps prevent sticking and makes cleanup a breeze. Roast the steaks for 20-25 minutes, flipping them halfway through, until they are golden brown and tender when pierced with a fork.

  5. Get Creative with Toppings: Once the steaks are cooked, it’s time to personalize your plate! Sprinkle with grated parmesan cheese, chopped fresh herbs, or a squeeze of lemon zest. Feeling adventurous? Top with marinara sauce and vegan cheese for a “pizza” twist, or drizzle with pesto or chimichurri sauce for a burst of flavor.

Enjoy!

Roasted cauliflower steaks are a fantastic main course on their own, or they can be served alongside your favorite protein dish. They’re perfect for a quick and healthy weeknight meal, or they can be dressed up for a vegetarian feast. So ditch the boring and embrace the versatility of roasted cauliflower steaks!
