Chia Seed Pudding with Tropical Fruits

Yields: 2 servings Prep time: 5 minutes Chill time: at least 2 hours

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup plant-based milk (almond, coconut, oat, or soy)
  • 1/4 cup Greek yogurt (optional, for added creaminess)
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • 1 teaspoon vanilla extract
  • A pinch of cinnamon
  • Fresh fruits of your choice (mango, pineapple, papaya, kiwi)
  • Optional toppings: granola, coconut flakes, nuts

Instructions:

  1. In a medium bowl, combine chia seeds, plant-based milk, Greek yogurt (if using), maple syrup, vanilla extract, and cinnamon. Stir well to combine.
  2. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight. The chia seeds will absorb the liquid and form a pudding-like consistency.
  3. Once the chia pudding has set, stir gently to break up any clumps.
  4. Divide the pudding into two bowls.
  5. Top with your favorite tropical fruits, granola, coconut flakes, or nuts.

Tip: For a thicker pudding, reduce the amount of milk. For a thinner consistency, add more milk.
