Chickpea and Yogurt Flatbread (No Oven Needed!)

Ingredients:

  • 1 cup chickpea flour (also called gram flour)
  • 1/2 cup plain yogurt (Greek or regular)
  • 1/2 cup water
  • 1/2 tsp baking powder
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp cumin seeds or Nigella seeds (optional, for added flavor)
  • 1 tbsp olive oil (for cooking)
  • Fresh herbs (like parsley or cilantro) for garnish (optional)

Instructions:

  1. Prepare the batter: In a mixing bowl, whisk together the chickpea flour, yogurt, water, baking powder, and salt until you get a smooth, lump-free batter. It should have a pancake batter-like consistency. If the batter seems too thick, add a little more water.
  2. Add seeds (optional): If using cumin seeds or Nigella seeds, stir them into the batter for an extra layer of flavor.
  3. Heat the pan: Heat a non-stick pan or skillet over medium heat. Add a bit of olive oil to the pan.
  4. Cook the flatbread: Pour a small ladleful of the batter into the pan, spreading it out to form a flat circle, like a pancake. Cook for about 2-3 minutes on one side until bubbles form and the bottom is golden brown. Flip and cook the other side for another 2-3 minutes.
  5. Garnish: Once cooked, remove from the pan and garnish with fresh herbs if desired.
  6. Serve: Enjoy your chickpea and yogurt flatbread warm! You can serve it with dips like hummus or a yogurt sauce, or simply enjoy it on its own.
