Ingredients
For the Apple Filling:
- 4-5 medium apples, peeled and grated
- 1 tbsp butter
- 2 tbsp sugar (optional, adjust to taste)
- 1 tsp cinnamon
For the Dough:
- 1 egg
- 100 g (½ cup) sugar
- 100 g (½ cup) sour cream
- 250 g (2 cups) flour
- 1 tsp baking powder
- Pinch of salt
- 1 tsp vanilla extract or 1 packet of vanillin
- 100 g (½ cup) cold butter, cut into small cubes
Instructions
- Prepare the Apple Filling:
- In a skillet, melt the butter over medium heat.
- Add the grated apples and sugar (if using).
- Stir in the cinnamon and cook for 5-7 minutes, until the apples soften and the mixture thickens. Set aside to cool.
- Make the Dough:
- In a large bowl, whisk the egg and sugar until light and well combined.
- Stir in the sour cream and vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a crumbly dough begins to form.
- Add the cold butter cubes and use your hands or a pastry cutter to incorporate them into the dough until it resembles coarse crumbs.
- Assemble the Cookies:
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Roll out the dough on a floured surface to about ¼-inch thickness.
- Cut the dough into circles using a cookie cutter or a glass.
- Place a spoonful of the apple filling in the center of each circle.
- Fold the dough over the filling to form a half-moon shape, sealing the edges by pressing lightly with your fingers or a fork.
- Bake:
- Arrange the cookies on the prepared baking sheet.
- Bake for 15-20 minutes, or until the cookies are golden around the edges.
- Cool & Enjoy:
