This recipe is a simple yet flavorful way to enjoy the health benefits of beetroot. The roasting process brings out the sweetness of the beetroot, while the goat cheese and balsamic glaze add a decadent touch.

Ingredients:

  • 2 medium beetroots, washed and trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 4 ounces goat cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • Freshly chopped chives, for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the beetroots into wedges or cubes. Aim for bite-sized pieces.
  3. Toss the beetroots with olive oil, thyme, salt, and pepper. Spread them out in a single layer on the prepared baking sheet.
  4. Roast for 30-40 minutes, or until the beetroots are tender when pierced with a fork.
  5. While the beetroots are roasting, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and brown sugar. Heat over medium heat, stirring occasionally, until the mixture thickens and becomes syrupy (about 5-7 minutes).
  6. Once the beetroots are cooked, remove them from the oven and arrange them on a serving plate.
  7. Crumble the goat cheese over the roasted beetroots.
  8. Drizzle the balsamic glaze over the top.
  9. Garnish with fresh chives (optional).

Tips:

  • For a richer flavor, roast the beetroots with a drizzle of honey or maple syrup along with the olive oil.
  • Want a vegan option? Substitute vegan cream cheese for the goat cheese.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan or microwave.
