Don’t Eat Avocado Seeds, Do This Instead: Creamy Avocado Pasta

Ingredients:

  • 2 ripe avocados (pitted and flesh scooped out)
  • 1 garlic clove (minced)
  • 1/4 cup fresh basil leaves (chopped)
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 12 oz. pasta of your choice (spaghetti, fettuccine, or penne work well)
  • Cherry tomatoes (halved, for garnish)
  • Grated Parmesan and extra basil for garnish

Instructions:

  1. Cook the Pasta:
    • In a large pot, bring salted water to a boil.
    • Add the pasta and cook according to the package instructions until al dente.
    • Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
  2. Prepare the Avocado Sauce:
    • While the pasta is cooking, prepare the creamy avocado sauce.
    • In a food processor or blender, combine the avocado flesh, minced garlic, chopped basil, lemon juice, olive oil, and Parmesan cheese (if using).
    • Blend until smooth and creamy. If the sauce is too thick, add a tablespoon of the reserved pasta water at a time until the desired consistency is reached.
    • Season with salt, pepper, and red pepper flakes (if using) to taste.
  3. Combine and Serve:
    • In a large mixing bowl, toss the cooked pasta with the avocado sauce, ensuring the pasta is well coated.
    • If needed, add a little more pasta water to help the sauce adhere to the pasta.
    • Garnish with halved cherry tomatoes, grated Parmesan, and extra basil leaves.
  4. Serve Immediately:
    • Serve the pasta warm, enjoying the creamy, rich flavors without any avocado seeds involved!

Tip: Instead of throwing away the avocado seeds, consider using them for natural dyeing, making a homemade scrub, or even growing your own avocado tree!
