- 12 oz. pasta of your choice (spaghetti, fettuccine, or penne work well)
- Cherry tomatoes (halved, for garnish)
- Grated Parmesan and extra basil for garnish
Instructions:
- Cook the Pasta:
- In a large pot, bring salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
- Prepare the Avocado Sauce:
- While the pasta is cooking, prepare the creamy avocado sauce.
- In a food processor or blender, combine the avocado flesh, minced garlic, chopped basil, lemon juice, olive oil, and Parmesan cheese (if using).
- Blend until smooth and creamy. If the sauce is too thick, add a tablespoon of the reserved pasta water at a time until the desired consistency is reached.
- Season with salt, pepper, and red pepper flakes (if using) to taste.
- Combine and Serve:
- In a large mixing bowl, toss the cooked pasta with the avocado sauce, ensuring the pasta is well coated.
- If needed, add a little more pasta water to help the sauce adhere to the pasta.
- Garnish with halved cherry tomatoes, grated Parmesan, and extra basil leaves.
- Serve Immediately:
- Serve the pasta warm, enjoying the creamy, rich flavors without any avocado seeds involved!
Tip: Instead of throwing away the avocado seeds, consider using them for natural dyeing, making a homemade scrub, or even growing your own avocado tree!
