Easy Zucchini Pickles:

 

Ingredients:

  • 3 medium zucchinis, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/4 cup sugar (adjust to taste)
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon dill seeds
  • 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
  • 2 garlic cloves, smashed
  • Fresh dill sprigs (optional)

Instructions:

  1. Prepare the Zucchini:
    Slice the zucchinis into thin rounds or spears, depending on your preference. Place them in a large bowl and add the sliced onion.
  2. Make the Brine:
    In a small pot, combine the vinegar, water, sugar, salt, mustard seeds, dill seeds, crushed red pepper flakes (if using), and garlic. Bring the mixture to a boil, stirring until the sugar and salt dissolve completely.
  3. Pour the Brine:
    Pour the hot brine over the zucchini and onions in the bowl, making sure all the slices are submerged.
  4. Cool & Refrigerate:
    Let the mixture cool to room temperature. Once cooled, transfer the zucchini pickles and brine into clean glass jars. Seal tightly and refrigerate.
  5. Pickling Time:
    Allow the zucchini pickles to marinate in the fridge for at least 24 hours before eating. They will develop more flavor over the next few days and can be stored in the fridge for up to 2 weeks.
