- 1 teaspoon baking soda
- 2 tablespoons mixed seeds (e.g., chia, flax, sesame, sunflower)
- 200 ml kefir or yogurt (~ 3/4 cup)
- 1 medium egg
- 1 teaspoon apple cider vinegar
- Seeds for decoration (optional)
Instructions:
- Preheat your oven to 180°C (350°F) and line a small loaf pan with parchment paper or lightly grease it.
- Blend the oats (if you prefer a smoother texture) to create oat flour. This step is optional—if you like a chunkier texture, you can leave the oats as they are.
- In a bowl, mix the oat flakes (or oat flour) with the baking soda, salt, and 2 tablespoons of mixed seeds.
- In another bowl, whisk together the kefir (or yogurt), egg, and apple cider vinegar until well combined.
- Pour the wet ingredients into the dry ingredients, and mix until everything is just combined. The batter will be thick but manageable.
- Transfer the batter into the prepared loaf pan, spreading it evenly.
- Sprinkle some additional seeds on top for decoration and extra crunch.
- Bake for 30-40 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
