Flourless Oatmeal Bread Recipe for a Healthy Breakfast

Ingredients:

  • 90 g oat flakes (1 cup)
  • A pinch of salt
  • 1 teaspoon baking soda
  • 2 tablespoons mixed seeds (e.g., chia, flax, sesame, sunflower)
  • 200 ml kefir or yogurt (~ 3/4 cup)
  • 1 medium egg
  • 1 teaspoon apple cider vinegar
  • Seeds for decoration (optional)

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a small loaf pan with parchment paper or lightly grease it.
  2. Blend the oats (if you prefer a smoother texture) to create oat flour. This step is optional—if you like a chunkier texture, you can leave the oats as they are.
  3. In a bowl, mix the oat flakes (or oat flour) with the baking soda, salt, and 2 tablespoons of mixed seeds.
  4. In another bowl, whisk together the kefir (or yogurt), egg, and apple cider vinegar until well combined.
  5. Pour the wet ingredients into the dry ingredients, and mix until everything is just combined. The batter will be thick but manageable.
  6. Transfer the batter into the prepared loaf pan, spreading it evenly.
  7. Sprinkle some additional seeds on top for decoration and extra crunch.
  8. Bake for 30-40 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.
  9. Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Serving Suggestions:

  • This bread is delicious on its own or topped with nut butter, avocado, or even a drizzle of honey.
