Garlic and Onion Wellness Soup

This recipe is inspired by the idea of using garlic and onion to support overall health, including potential benefits for ear and immune system health.

Ingredients:

  • 1 large onion, finely chopped
  • 5 cloves of garlic, minced
  • 1 tbsp olive oil or coconut oil
  • 1 cup celery, diced
  • 1 carrot, diced
  • 1 small potato, peeled and diced
  • 4 cups vegetable or chicken broth (preferably low-sodium)
  • 1 tsp thyme (fresh or dried)
  • 1 tsp turmeric powder (for anti-inflammatory benefits)
  • 1 tsp black pepper (boosts turmeric’s effect)
  • Salt to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Sauté the aromatics:
    Heat the olive oil in a large pot over medium heat. Add the chopped onions and cook until softened and slightly caramelized, about 5-7 minutes. Add the minced garlic and cook for another minute, until fragrant.
  2. Add the vegetables:
    Stir in the diced celery, carrot, and potato. Cook for about 5 minutes, allowing the vegetables to soften slightly.
  3. Add the broth and spices:
    Pour in the vegetable or chicken broth and stir in the thyme, turmeric, and black pepper. Bring the mixture to a simmer and cook for about 20 minutes, or until the vegetables are tender.
  4. Blend (optional):
    For a smoother texture, use an immersion blender to blend the soup until creamy. You can also leave it chunky for a heartier texture.
  5. Season and serve:
    Taste the soup and add salt as needed. Ladle into bowls and garnish with fresh parsley or cilantro if desired.

Tips:

  • Adding garlic and onions to your diet regularly can have general health benefits, such as supporting the immune system and reducing inflammation.
  • For an extra nutrient boost, you could add a handful of leafy greens like spinach or kale at the end of cooking.
