Garlic Lovers’ Roasted Garlic Spread

(Plus, How to Peel 38 Cloves in 38 Seconds!)

Ingredients:

  • 38 cloves of garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Optional: a pinch of rosemary or thyme for extra flavor

Tools:

  • Two metal bowls (same size)
  • Oven-safe dish
  • Aluminum foil

Instructions:

  1. Peeling the Garlic (The 38-Second Trick):
    Place all 38 cloves of garlic inside one of the metal bowls. Take the second metal bowl, turn it upside down, and place it on top of the first, forming a clamshell. Now, shake the bowls vigorously for 20-30 seconds. The motion will loosen the skins from the garlic, and when you open the bowls, most of the cloves should be peeled!
  2. Roasting the Garlic:
    Preheat your oven to 400°F (200°C). Spread the peeled garlic cloves evenly on an oven-safe dish, drizzle with olive oil, and season with salt and pepper. Add herbs if desired. Cover the dish with aluminum foil and roast for 30-40 minutes until the cloves become soft and golden.
  3. Mash Into a Spread:
    Once the garlic is roasted, remove it from the oven and let it cool slightly. Mash the cloves into a smooth spread using a fork.
  4. Serve & Enjoy!
    Spread the roasted garlic on toasted bread, mix it into sauces, or use it as a flavorful topping for roasted vegetables, meats, or pasta.
