Ingredients:
- 2-inch piece of fresh ginger, peeled and grated
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 3 tablespoons honey or maple syrup (or to taste)
- 4 cups cold water
- Ice cubes
- Fresh mint leaves (optional, for garnish)
- Lemon slices (optional, for garnish)
Instructions:
- Make the Ginger Infusion:
- Place the grated ginger in a small saucepan.
- Add 1/2 cup of water and bring it to a simmer on medium heat.
- Let it simmer for about 5 minutes to extract the ginger flavor.
- Remove from heat and allow the ginger water to cool down for 5-10 minutes.
- Strain the ginger infusion using a fine mesh strainer to remove the solids.
- Prepare the Lemonade Base:
- In a pitcher, combine the freshly squeezed lemon juice, honey (or maple syrup), and the strained ginger infusion.
- Stir until the honey or syrup is fully dissolved.
- Add Water and Chill:
- Add the remaining 3 1/2 cups of cold water to the pitcher.
- Taste and adjust sweetness if needed by adding more honey or lemon juice.
- Serve:
- Fill glasses with ice cubes and pour the ginger lemonade over them.
- Garnish with lemon slices and fresh mint leaves for extra freshness.
