Golden Garlic & Leek Fritters with Creamy Dill Dip

These Golden Garlic & Leek Fritters are crispy on the outside, tender on the inside, and full of flavor. Paired with a creamy dill dip, this dish makes a perfect appetizer, snack, or side dish. The savory richness of garlic and leeks, combined with the fresh, tangy dip, is sure to be a hit at any meal!


Ingredients:

For the Garlic & Leek Fritters:

  • 2 medium leeks (cleaned and chopped)
  • 4 cloves of garlic (minced)
  • 1 cup of all-purpose flour
  • 2 large eggs
  • 1/2 cup grated cheese (optional, cheddar or parmesan works well)
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon smoked paprika (optional, for a smoky flavor)
  • 1/4 teaspoon baking powder (to make the fritters light and fluffy)
  • 1/4 cup milk (dairy or plant-based)
  • 2 tablespoons olive oil (for frying)
  • Fresh parsley or chives (chopped, for garnish)

For the Creamy Dill Dip:

  • 1/2 cup sour cream (or Greek yogurt for a healthier option)
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

For the Garlic & Leek Fritters:

  1. Prepare the Leeks and Garlic:
    • Clean the leeks thoroughly by cutting off the root ends and tough dark green parts. Slice the leeks into thin rounds.
    • Mince the garlic cloves.
  2. Sauté the Leeks and Garlic:
    • Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped leeks and sauté for 4-5 minutes until they soften.
    • Add the minced garlic and cook for another 1-2 minutes, until fragrant. Remove from heat and allow it to cool slightly.
  3. Make the Fritter Batter:
    • In a large bowl, whisk together the eggs, milk, salt, pepper, smoked paprika, and baking powder.
    • Gradually add the flour and mix until a smooth batter forms. Stir in the sautéed leeks and garlic, along with the grated cheese (if using). You should have a thick batter with chunks of leeks and garlic mixed in.
  4. Fry the Fritters:
    • Heat the remaining 1 tablespoon of olive oil in a large frying pan over medium heat.
    • Scoop spoonfuls of the batter and drop them into the hot oil. Flatten them slightly with the back of the spoon to form small fritters.
    • Fry for about 3-4 minutes on each side, until golden and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  5. Garnish and Serve:
    • Garnish the fritters with freshly chopped parsley or chives for a pop of color and extra flavor.
