This simple yet effective method helps keep lemons fresh and usable throughout the year. Perfect for those who want to enjoy the zest and juice of fresh lemons, no matter the season!
Ingredients
- Fresh lemons (as many as you need)
- Coarse sea salt
- Glass jar with a tight-fitting lid
- Olive oil (optional)
Instructions
- Preparation:
- Wash the lemons thoroughly with cold water to remove any dirt or pesticides.
- Dry them completely with a clean cloth or paper towel.
- Salting the Lemons:
- Cut a deep cross into each lemon, making sure not to cut all the way through. The lemon should still hold together at the base.
- Generously sprinkle coarse sea salt into the cuts and all over the lemon. Ensure the salt gets into the cuts well.
- Packing the Jar:
- Place a layer of salt at the bottom of the glass jar.
- Pack the salted lemons tightly into the jar, pressing down to release some of their juices. The lemons should be covered with juice and salt.
- If the lemons are not fully submerged, add more lemon juice or a small amount of water to cover them. Alternatively, pour a thin layer of olive oil on top to seal.
- Sealing and Storing:
- Seal the jar tightly with its lid.
- Store the jar in a cool, dark place for about three weeks. Occasionally, shake the jar gently to redistribute the salt and juices.
- Using the Preserved Lemons:
- Once the lemons have been preserved, they can be stored in the refrigerator for up to a year.
- To use, rinse a lemon under cold water to remove excess salt. You can use the rind, pulp, and even the preserved juice in various dishes.
Tips
- Use organic lemons if possible, as you will be consuming the rind.
- The preserved lemons can be used in a variety of dishes, such as salads, stews, marinades, or sauces. They add a unique, tangy flavor.
Enjoy your all-year-round fresh lemons!
