- 1 cup dry green lentils
 - 4 large eggs
 - 1 small onion, diced
 - 1 garlic clove, minced
 - 1 small tomato, diced (optional)
 - 1 teaspoon cumin seeds

 - Salt and pepper, to taste
 - 2 tablespoons olive oil or butter

Instructions:
- Cook the Lentils:
- Rinse the green lentils under cold water.
 - In a pot, bring 3 cups of water to a boil. Add the lentils and cook for about 20-25 minutes, until tender but not mushy. Drain and set aside.
 
 - Prepare the Stir-Fry Base:
- In a large skillet or pan, heat 1 tablespoon of olive oil over medium heat.
 - Add cumin seeds and allow them to sizzle for a few seconds.
 - Stir in the diced onions and sauté until soft and golden, about 3-4 minutes.
 - Add minced garlic, turmeric powder, smoked paprika, and salt. Cook for another 1-2 minutes, stirring frequently.
 - If using tomatoes, add them now and cook until softened.
 
 - Add Lentils to the Mix:
- Add the cooked green lentils to the pan. Stir well, ensuring the lentils are coated in the spices.
 - Let them cook for 2-3 minutes, absorbing the flavors.
 
 - Cook the Eggs:
- Push the lentil mixture to the sides of the pan, making space in the center.
 - Add the remaining tablespoon of oil, and crack the eggs directly into the pan (or scramble them in a bowl beforehand if preferred).
 - Cook the eggs until the whites are set but the yolks are still a bit runny, or scramble them completely, mixing them with the lentils.
 
 - Combine and Serve:
- Once the eggs are cooked to your liking, gently fold them into the lentil mixture.
 - Taste and adjust seasoning with salt and pepper if necessary.
 
 - Garnish:
- Top with fresh cilantro or parsley, and serve with lemon wedges on the side for a bright kick.
