Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup beetroot, diced (helps manage cholesterol and blood pressure)

Instructions:
- Sauté Aromatics
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
- Add Vegetables
- Stir in the carrots, celery, and beetroot. Sauté for another 5 minutes to start softening the vegetables.
- Add Spices

- Pour in the vegetable broth and add the chickpeas. Bring the soup to a boil, then reduce to a simmer. Cover and let it cook for 20-25 minutes until all vegetables are tender.
- Add Greens
- Stir in the spinach or kale and cook for another 5 minutes until the greens are wilted and incorporated.
- Season and Serve
- Taste and adjust salt as needed. Serve warm, garnished with fresh parsley.
