Heart-Healthy Superfood Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup beetroot, diced (helps manage cholesterol and blood pressure)
  • 1 cup leafy greens (spinach or kale for added fiber and antioxidants)
  • 1 cup cooked chickpeas (for fiber and heart-healthy minerals)
  • 1 teaspoon ground turmeric (anti-inflammatory properties)
  • 1 teaspoon black seeds (Nigella sativa, may help manage cholesterol)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium vegetable broth
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté Aromatics
    • Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
  2. Add Vegetables
    • Stir in the carrots, celery, and beetroot. Sauté for another 5 minutes to start softening the vegetables.
  3. Add Spices
    • Sprinkle in turmeric, black seeds, cumin, and black pepper. Stir to coat the vegetables with spices.
  4. Add Broth and Chickpeas
    • Pour in the vegetable broth and add the chickpeas. Bring the soup to a boil, then reduce to a simmer. Cover and let it cook for 20-25 minutes until all vegetables are tender.
  5. Add Greens
    • Stir in the spinach or kale and cook for another 5 minutes until the greens are wilted and incorporated.
  6. Season and Serve
    • Taste and adjust salt as needed. Serve warm, garnished with fresh parsley.
