Ingredients:
- 1/4 cup extra virgin olive oil
- 2 tablespoons vinegar (red wine vinegar, white wine vinegar, or apple cider vinegar)
- 1 teaspoon Dijon mustard (optional, for added flavor and emulsification)
- 1 clove garlic, minced
- 1 tablespoon fresh herbs (such as basil, parsley, or thyme), finely chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and freshly ground black pepper, to taste
Instructions:
- Prepare the Garlic and Herbs:
- Mince the garlic finely.
- Chop the fresh herbs if you’re using them.
- Combine Ingredients:
- In a small bowl or jar, add the minced garlic, fresh herbs, dried oregano, and dried basil.
- Pour in the vinegar of your choice. If using Dijon mustard, add it now.
- Whisk or stir well to combine all the ingredients.
- Add the Oil:
- Slowly drizzle the olive oil into the vinegar mixture while whisking continuously. This will help to emulsify the dressing and blend the flavors.
- Season:
- Add salt and freshly ground black pepper to taste.
- Continue to whisk until the dressing is well combined and has a slightly thickened consistency.
- Taste and Adjust:
- Taste the dressing and adjust seasoning if necessary. You can add more vinegar for tanginess, more oil for richness, or more herbs for an extra punch of flavor.
- Serve:
- Drizzle the herb-infused vinegar & oil dressing over your favorite salad. It works well with mixed greens, chopped vegetables, or even as a marinade for grilled vegetables or meats.
- Store:
- If you have any leftover dressing, store it in an airtight container in the refrigerator for up to a week. Shake or whisk before using as the oil may separate over time.
This versatile and flavorful dressing is perfect for adding a fresh, herby touch to your salads!
