Herb-Infused Vinegar & Oil Salad Dressing

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons vinegar (red wine vinegar, white wine vinegar, or apple cider vinegar)
  • 1 teaspoon Dijon mustard (optional, for added flavor and emulsification)
  • 1 clove garlic, minced
  • 1 tablespoon fresh herbs (such as basil, parsley, or thyme), finely chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Garlic and Herbs:
    • Mince the garlic finely.
    • Chop the fresh herbs if you’re using them.
  2. Combine Ingredients:
    • In a small bowl or jar, add the minced garlic, fresh herbs, dried oregano, and dried basil.
    • Pour in the vinegar of your choice. If using Dijon mustard, add it now.
    • Whisk or stir well to combine all the ingredients.
  3. Add the Oil:
    • Slowly drizzle the olive oil into the vinegar mixture while whisking continuously. This will help to emulsify the dressing and blend the flavors.
  4. Season:
    • Add salt and freshly ground black pepper to taste.
    • Continue to whisk until the dressing is well combined and has a slightly thickened consistency.
  5. Taste and Adjust:
    • Taste the dressing and adjust seasoning if necessary. You can add more vinegar for tanginess, more oil for richness, or more herbs for an extra punch of flavor.
  6. Serve:
    • Drizzle the herb-infused vinegar & oil dressing over your favorite salad. It works well with mixed greens, chopped vegetables, or even as a marinade for grilled vegetables or meats.
  7. Store:
    • If you have any leftover dressing, store it in an airtight container in the refrigerator for up to a week. Shake or whisk before using as the oil may separate over time.
