Homemade Creamy Coconut Popsicles
Ingredients:
- 1 can (400ml) of coconut milk
- 1 cup (240ml) of heavy cream or coconut cream
- 1/2 cup (120ml) of sweetened condensed milk (or use a dairy-free alternative for a vegan option)
- 1/4 cup (60ml) of coconut water (optional, for extra coconut flavor)
- 1/2 cup (50g) of shredded coconut (sweetened or unsweetened, based on preference)
- 1-2 tablespoons of sugar or sweetener of choice (adjust to taste)
- 1 teaspoon of vanilla extract (optional)
- A pinch of salt
Instructions:
- Prepare the Mixture:
- In a blender or a large mixing bowl, combine the coconut milk, heavy cream (or coconut cream), sweetened condensed milk, coconut water (if using), sugar, vanilla extract, and salt. Blend or whisk until smooth and well combined.
- Add Shredded Coconut:
- Stir in the shredded coconut until evenly distributed throughout the mixture.
- Taste and Adjust:
- Taste the mixture and adjust the sweetness if needed. You can add more sugar or sweetener if you prefer a sweeter popsicle.
- Pour into Molds:
- Carefully pour the mixture into popsicle molds. Leave a small gap at the top of each mold to allow for expansion as the mixture freezes.
- Insert Sticks and Freeze:
- Insert popsicle sticks into each mold. Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.
- Unmold and Serve:
- To unmold the popsicles, run the molds under warm water for a few seconds to loosen them. Gently pull out the popsicles and enjoy!
