Ingredients:
- 2 cups tiger nuts (dried or fresh)
- 1 medium ginger
- 10 dates (pitted)
- 1 coconut (remove the shell and extract the flesh)
Preparation Steps:
- Prepare the Tiger Nuts:
- Clean the tiger nuts, removing any dirt or stones.
- Soak them in clean water overnight if you’re using dried tiger nuts. For fresh tiger nuts, soaking is optional.
- Prepare Other Ingredients:
- After soaking, rinse the tiger nuts and place them in a blender.
- Remove the seeds from the dates, rinse, and add to the blender.
- Dice the coconut flesh and add it to the blender along with the ginger (peeled).
- Add a little water or coconut water to aid blending.
- Blend Smooth:
- Blend all ingredients until smooth. Adjust the amount of water to your desired consistency, but avoid adding too much to keep the drink flavorful.
- Strain the Mixture:
- Use a pap or cheesecloth to strain the milk into a bowl. The first batch of strained milk will be thick.
- Place the chaff back into the blender, add more water, and blend again. Strain once more to extract all the milk. Repeat until you’ve extracted all the milk, keeping the drink thick for a richer taste.
- Chill and Serve:
- Pour the extracted tiger nut milk into a container and refrigerate to chill.
- Serve cold, and enjoy!
