Ingredients:
- 1 cup raw cashews (soaked in water for at least 4 hours, then drained)
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
Instructions:
- Prepare the Cashews:
- Soak the raw cashews in water for at least 4 hours, preferably overnight. This will soften them and make them easier to blend. Drain the cashews and rinse them under cold water.
- Blend the Ingredients:
- Place the soaked and drained cashews, nutritional yeast, and lemon juice in a high-speed blender or food processor.
- Blend until smooth, stopping to scrape down the sides as needed. Add a small amount of water (1-2 tablespoons) if the mixture is too thick and difficult to blend.
- Adjust Consistency and Flavor:
- Taste the mixture and adjust the flavors as needed. You can add a bit more lemon juice for extra tanginess or nutritional yeast for a cheesier flavor. If you prefer a thinner consistency, gradually add more water until you reach the desired texture.
- Chill and Serve:
- Transfer the blended cheese to a container and refrigerate for at least an hour to let it firm up. This cheese can be used as a spread, dip, or even sliced for sandwiches once it has set.
- Enjoy!:
- Use your homemade vegan cheese on crackers, in sandwiches, or as a dip for veggies. Enjoy the creamy, cheesy goodness without any store-bought ingredients!
