Homemade Vegan Cheese (Only 3 Ingredients! My Grandmother’s Recipe)

Ingredients:

  • 1 cup raw cashews (soaked in water for at least 4 hours, then drained)
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Cashews:
    • Soak the raw cashews in water for at least 4 hours, preferably overnight. This will soften them and make them easier to blend. Drain the cashews and rinse them under cold water.
  2. Blend the Ingredients:
    • Place the soaked and drained cashews, nutritional yeast, and lemon juice in a high-speed blender or food processor.
    • Blend until smooth, stopping to scrape down the sides as needed. Add a small amount of water (1-2 tablespoons) if the mixture is too thick and difficult to blend.
  3. Adjust Consistency and Flavor:
    • Taste the mixture and adjust the flavors as needed. You can add a bit more lemon juice for extra tanginess or nutritional yeast for a cheesier flavor. If you prefer a thinner consistency, gradually add more water until you reach the desired texture.
  4. Chill and Serve:
    • Transfer the blended cheese to a container and refrigerate for at least an hour to let it firm up. This cheese can be used as a spread, dip, or even sliced for sandwiches once it has set.
  5. Enjoy!:
    • Use your homemade vegan cheese on crackers, in sandwiches, or as a dip for veggies. Enjoy the creamy, cheesy goodness without any store-bought ingredients!
