How to Make and Use Pumpkin Powder at Home

 

Ingredients:

  • Fresh pumpkin (choose a variety like sugar pumpkins, which are sweeter and less watery)

Instructions:

  1. Prepare the Pumpkin:
    Start by cutting the pumpkin in half and removing the seeds and stringy parts. You can save the seeds for roasting if you like.
  2. Cook the Pumpkin:
    Roast the pumpkin halves in the oven at 350°F (175°C) for about 45-60 minutes, until the flesh is soft and tender. Alternatively, you can steam or boil the pumpkin, but roasting concentrates the flavor.
  3. Scoop Out the Flesh:
    Once the pumpkin has cooled enough to handle, scoop out the flesh from the skin. You can either blend it into a puree or leave it chunky, depending on your preference.
  4. Dehydrate the Pumpkin:
    • Spread the pumpkin puree or chunks in a thin layer on dehydrator trays (or use parchment paper if you’re working with a puree).
    • Set the dehydrator to 135°F (57°C) and let it run for 8-12 hours, depending on the thickness of the pumpkin. You want the pumpkin to be completely dry and brittle.
    • If you don’t have a dehydrator, you can use an oven set to its lowest temperature with the door slightly open to allow moisture to escape.
  5. Grind the Dehydrated Pumpkin:
    Once the pumpkin is fully dehydrated, break it into smaller pieces and grind it into a fine powder using a coffee grinder or blender.
  6. Store the Pumpkin Powder:
    Store the pumpkin powder in an airtight container in a cool, dry place. It can last for several months this way.

How to Rehydrate Pumpkin Powder:

When you’re ready to use your pumpkin powder, simply mix it with water to rehydrate.

  • For Pumpkin Puree: Mix 1 part pumpkin powder with 2 parts water. Stir well and let it sit for about 10 minutes to thicken. You can adjust the water to reach your desired consistency.

  • Baking: Add it to bread, muffins, pancakes, and cookies for a boost of flavor and nutrition.
  • Smoothies: Stir a tablespoon or two into your morning smoothie for a fall twist.
