How to Preserve Garlic in Oil

Ingredients:

  • 2 cups of fresh garlic cloves (peeled)
  • 2 cups of high-quality olive oil or vegetable oil
  • 1 tsp of salt (optional)
  • Herbs like thyme, rosemary, or bay leaves (optional)

Equipment:

  • Sterilized glass jar with a tight-fitting lid
  • Small saucepan

Instructions:

  1. Prepare the Garlic: Begin by peeling the garlic cloves. You can either leave them whole or slice them if you prefer smaller pieces.
  2. Blanching the Garlic (Optional): If you want to reduce the pungency of the garlic, blanch the cloves by boiling them in water for 2-3 minutes. Drain and let them cool.
  3. Sterilize the Jar: Before using the jar, ensure it’s properly sterilized. You can do this by boiling it in water for 10 minutes or using a dishwasher’s sterilization cycle. Let the jar dry completely.
  4. Add Garlic to the Jar: Place the peeled garlic cloves into the sterilized jar. If using herbs for added flavor, add them to the jar as well.
  5. Cover with Oil: Pour the olive oil or vegetable oil over the garlic cloves, making sure they are fully submerged. Add a teaspoon of salt if desired for taste and preservation.
  6. Seal the Jar: Secure the jar with its lid, ensuring it’s airtight.
  7. Storage: Store the jar in the refrigerator. It’s important to keep the garlic submerged in the oil to prevent air exposure, which can lead to spoilage.
  8. Shelf Life: Use the garlic within 3 months. The oil will become infused with garlic flavor, and you can use it in cooking as well.

Important Notes:

  • Botulism Risk: Garlic in oil is a low-acid food that can create a risk for botulism if not stored properly. Always keep it refrigerated, and never store at room temperature.
  • Freeze for Longer Storage: If you want to keep garlic in oil for longer periods, consider freezing it. The oil will solidify, but it will keep the garlic safe for a longer time.
