How to Store Homegrown Potatoes

  • Freshly harvested homegrown potatoes

  • A cool, dark, and well-ventilated storage area (like a cellar, garage, or pantry)
  • Cardboard box, burlap sack, or breathable basket
  • Newspaper or straw (optional for insulation)

Instructions:

  1. Cure the Potatoes:
    • After harvesting, allow the potatoes to cure in a dark, well-ventilated area for about 1-2 weeks. This process helps toughen their skins and improves their storage quality.
    • Spread them out in a single layer and keep them away from direct sunlight.
  2. Check for Damage:
    • Inspect each potato for bruises, cuts, or signs of rot. Remove any damaged potatoes immediately, as they can cause others to spoil.
  3. Choose the Right Container:
    • Use a cardboard box, burlap sack, or breathable basket for storage. Avoid plastic bags, as they can trap moisture and lead to rot.
    • If using a cardboard box, you can line it with newspaper for added insulation.
  4. Store in a Cool, Dark Place:
    • Ideal storage temperature is between 45°F to 50°F (7°C to 10°C). Avoid temperatures below 40°F (4°C) to prevent the potatoes from converting starch to sugar, which can affect flavor and texture.
    • Choose a location that remains consistently dark to prevent greening and sprouting.
  5. Maintain Humidity:
    • Potatoes prefer a humidity level of around 85-90%. If your storage area is too dry, you can add a small container of water to increase humidity.
    • Avoid excessive moisture, which can lead to rot.
  6. Check Regularly:
    • Inspect your stored potatoes every couple of weeks for any signs of spoilage or sprouting. Remove any affected potatoes immediately to prevent spreading.
  7. Use as Needed:
    • When you need to use your potatoes, take out only what you need and keep the remaining ones in storage.

Tips:

  • Avoid washing potatoes before storage, as excess moisture can lead to rot. Only wash them right before cooking.
  • Store different varieties of potatoes separately, as some may have different storage needs.
