Ingredients:

  • 1 cup green or brown lentils, rinsed
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 bell pepper (any color), diced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 2 cups vegetable broth (or water)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp soy sauce (optional)
  • 2 tbsp nutritional yeast (optional, for a cheesy flavor)
  • Fresh parsley or cilantro, chopped, for garnish

Instructions:

  1. Prepare the Lentils:
    • In a medium pot, add the rinsed lentils and cover them with water. Bring to a boil, then reduce to a simmer. Cook for about 20-25 minutes, or until the lentils are tender but not mushy. Drain and set aside.
  2. Sauté the Vegetables:
    • In a large skillet or saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
    • Add the carrot, celery, and bell pepper. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are softened.
  3. Add the Tomatoes and Spices:
    • Stir in the diced tomatoes with their juices, vegetable broth, cumin, smoked paprika, thyme, oregano, salt, and pepper. Bring the mixture to a simmer.
  4. Combine and Simmer:
    • Add the cooked lentils to the vegetable mixture. Stir to combine. If using, add the soy sauce and nutritional yeast. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.
  5. Serve:
    • Serve the lentil mixture hot, garnished with fresh parsley or cilantro. This dish is delicious on its own, over rice, or with crusty bread.

Tips:

  • For a spicier version, add a pinch of cayenne pepper or red pepper flakes.
  • You can use red lentils, but keep in mind they cook faster and may become mushy, giving the dish a different texture.

Enjoy this incredible vegan lentil dish, a hearty and flavorful meal that’s sure to impress even the most devoted meat lovers!
