Creamy Garlic Pasta
Ingredients:
- 2 cups unsweetened almond milk (or any other plant-based milk)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon all-purpose flour
- Salt and pepper to taste
- 1/4 cup nutritional yeast (optional, for a cheesy flavor)
- 8 ounces pasta (your choice)
- Fresh parsley, chopped (for garnish)
Instructions:
- Boil the Pasta:
- In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the Garlic Milk:
- While the pasta is cooking, heat the olive oil in a saucepan over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.
- Create the Creamy Sauce:
- Add the flour to the saucepan and stir well to combine with the garlic and oil, forming a roux.
- Slowly pour in the almond milk, whisking continuously to avoid lumps.
- Increase the heat to medium-high and bring the mixture to a gentle boil, stirring frequently.
- Once the mixture starts to boil, reduce the heat and let it simmer for a few minutes until it thickens.
- Season and Combine:
- Add salt, pepper, and nutritional yeast (if using) to the sauce. Taste and adjust the seasoning as needed.
- Add the cooked pasta to the saucepan and toss to coat the pasta evenly with the creamy garlic sauce.
- Serve:
- Serve the creamy garlic pasta immediately, garnished with freshly chopped parsley.
