Low-Glycemic Green Smoothie

Ingredients:

  • 1 cup fresh spinach leaves
  • 1/2 avocado
  • 1/2 small cucumber, peeled and sliced
  • 1/2 green apple, cored and sliced (or a small green pear for a lower glycemic option)
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseeds
  • 1/2 cup unsweetened almond milk (or another low-carb milk alternative)
  • 1/2 cup water (adjust for desired consistency)
  • A few ice cubes (optional)
  • 1 teaspoon lemon juice (optional, for extra flavor)
  • A few fresh mint leaves (optional, for added freshness)

Instructions:

  1. Prepare Ingredients:
    • Wash the spinach leaves thoroughly.
    • Peel and slice the cucumber.
    • Core and slice the green apple or pear.
    • If using, squeeze fresh lemon juice from a lemon.
  2. Blend:
    • In a blender, combine the spinach, avocado, cucumber, apple (or pear), chia seeds, and flaxseeds.
    • Add the almond milk and water. Adjust the amount of water depending on how thick or thin you prefer your smoothie.
    • Blend until smooth. If you’re adding ice cubes, include them now and blend again until the ice is crushed and the smoothie is chilled.
  3. Taste and Adjust:
    • Taste the smoothie. If desired, add a teaspoon of lemon juice for a tangy flavor or a few fresh mint leaves for added freshness.
    • Blend briefly to combine any additional ingredients.
  4. Serve:
    • Pour the smoothie into a glass and enjoy immediately for the best taste and nutritional benefits.
