Moist Flourless Orange Cake

Ingredients:

  • 2 large oranges
  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) almond meal (finely ground almonds)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (120ml) olive oil or any mild vegetable oil

Instructions:

  1. Prepare the Oranges:
    • Place the oranges in a pot of boiling water and simmer for about 1 hour, ensuring they are completely submerged. This softens the oranges and removes bitterness.
    • After cooking, let the oranges cool completely.
    • Cut the oranges into quarters and remove any seeds. Blend the entire orange (peel and all) in a food processor or blender until smooth.
  2. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and line an 8-inch (20cm) round cake pan with parchment paper.
  3. Prepare the Batter:
    • In a large bowl, whisk the eggs and sugar together until pale and frothy.
    • Add the blended oranges and mix well.
    • In a separate bowl, combine the almond meal, baking powder, and salt.
    • Gently fold the dry ingredients into the wet mixture, then add the olive oil and mix until fully combined.
  4. Bake:
    • Pour the batter into the prepared cake pan and smooth the top.
    • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  5. Serve:
    • Dust with powdered sugar or serve with a dollop of dairy-free whipped cream if desired. Enjoy!
