Ingredients:
- 2 large oranges
- 4 large eggs
- 1 cup (200g) granulated sugar
- 1 cup (240ml) almond meal (finely ground almonds)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (120ml) olive oil or any mild vegetable oil
Instructions:
- Prepare the Oranges:
- Place the oranges in a pot of boiling water and simmer for about 1 hour, ensuring they are completely submerged. This softens the oranges and removes bitterness.
- After cooking, let the oranges cool completely.
- Cut the oranges into quarters and remove any seeds. Blend the entire orange (peel and all) in a food processor or blender until smooth.
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch (20cm) round cake pan with parchment paper.
- Prepare the Batter:
- In a large bowl, whisk the eggs and sugar together until pale and frothy.
- Add the blended oranges and mix well.
- In a separate bowl, combine the almond meal, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture, then add the olive oil and mix until fully combined.
- Bake:
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve:
- Dust with powdered sugar or serve with a dollop of dairy-free whipped cream if desired. Enjoy!
