Ingredients
- 1 onion, finely chopped
- Olive oil, for sautéing
- 1 celery stick, diced
- 1 carrot, grated
- 1 leek, finely chopped
- 2 sweet peppers, diced
- 3 cloves garlic, chopped
- Salt and pepper, to taste
- Oregano, to taste
- 3 potatoes, cut into cubes
- 1.5 liters vegetable broth
- 50 grams pasta
Instructions
- Prepare the Vegetables:
- Finely chop the onion, celery stick, and leek.
- Grate the carrot.
- Dice the sweet peppers.
- Chop the garlic.
- Cut the potatoes into cubes.
- Sauté the Vegetables:
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Add the celery, carrot, leek, sweet peppers, and garlic to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Season the Soup:
- Season the sautéed vegetables with salt, pepper, and oregano to taste.
- Add the Potatoes and Broth:
- Add the cubed potatoes to the pot and pour in the vegetable broth.
- Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 20 minutes, or until the potatoes are tender.
- Add the Pasta:
- Once the potatoes are tender, add the pasta to the pot.
- Continue to simmer for another 10 minutes, or until the pasta is cooked al dente.
- Final Adjustments:
- Taste the soup and adjust the seasoning if necessary.
- If the soup is too thick, you can add a bit more vegetable broth or water to reach your desired consistency.
- Serve:
