This soup is packed with nutrients from the Moringa leaves, along with other healthy vegetables for a hearty, immune-boosting dish.
Ingredients:
- 1 leaf of Moringa (or 1 tbsp Moringa powder, if fresh leaves aren’t available)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 medium zucchini, chopped
- 2 carrots, chopped
- 1 cup spinach leaves
- 4 cups vegetable broth
- 1/2 tsp turmeric powder
- 1/4 tsp black pepper
- Salt to taste
- 1 tbsp lemon juice (optional, for extra zest)
- Fresh herbs (parsley or cilantro) for garnish
Instructions:
- Prep the Moringa: If using fresh Moringa leaves, strip them off the stems and set aside. If using Moringa powder, keep it ready to mix in at the end.
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic. Sauté until they are soft and fragrant, about 3-5 minutes.
- Add vegetables: Toss in the chopped zucchini, carrots, and spinach leaves. Stir to coat them in the oil and let them cook for 2-3 minutes.
- Simmer: Pour in the vegetable broth and bring to a boil. Lower the heat to a simmer, cover, and let the vegetables cook for about 15 minutes, or until they are tender.
- Add spices: Stir in the turmeric, black pepper, and salt to taste. Simmer for another 2 minutes to let the flavors blend.
- Add Moringa: If using fresh Moringa leaves, add them to the pot in the last 5 minutes of cooking. If using powder, stir it in at the very end and turn off the heat.
- Blend (optional): For a smooth soup, you can blend it using an immersion blender or transfer it in batches to a blender.
- Finish & Serve: Stir in the lemon juice (optional) for extra brightness, and garnish with fresh herbs like parsley or cilantro.
Enjoy your nourishing Moringa super green soup! It’s a “gold mine” of nutrition, perfect for boosting your health.
