Mulberry Jam Recipe

Ingredients:

  • 4 cups fresh mulberries (washed and de-stemmed)
  • 2 cups granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest (optional)
  • 1/4 cup water

Instructions:

  1. Prepare the Mulberries:
    • After washing the mulberries thoroughly, remove any stems or leaves.
  2. Cook the Fruit:
    • In a large saucepan, combine the mulberries, sugar, lemon juice, and water.
    • Stir the mixture over medium heat until the sugar dissolves and the mulberries begin to release their juices.
  3. Simmer and Reduce:
    • Bring the mixture to a boil, then reduce the heat to low and simmer.
    • Stir occasionally for about 20-30 minutes until the mixture thickens. Use a spoon to mash some of the berries for a smoother texture, or leave them whole for a chunkier jam.
  4. Check the Consistency:
    • You can test the jam by placing a spoonful on a cold plate. If it holds its shape and doesn’t run, it’s ready. If it’s too runny, let it cook a little longer.
  5. Add the Lemon Zest:
    • For an extra burst of citrusy flavor, stir in the lemon zest just before removing the jam from the heat.
  6. Store the Jam:
    • Carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of space at the top.
    • Seal the jars and let them cool to room temperature.
    • Store in the refrigerator for up to 3 weeks, or follow proper canning methods for longer preservation.
