Nettle and Lemon Syrup (No Cooking, No Preservatives)

Ingredients:

  • 1 cup fresh nettle leaves (young and tender)
  • 1 cup fresh lemon juice (about 4-5 lemons)
  • 1 cup honey or maple syrup (for a vegan option)
  • 1 cup water

Equipment:

  • Blender or food processor
  • Fine mesh strainer or cheesecloth
  • Large bowl
  • Glass jar with a tight-fitting lid

Instructions:

  1. Prepare the Nettle Leaves:
    • Carefully rinse the nettle leaves under cold water. Use gloves while handling them to avoid any stings. Remove any tough stems.
  2. Blend the Ingredients:
    • In a blender or food processor, combine the nettle leaves, fresh lemon juice, honey (or maple syrup), and water. Blend until the mixture is smooth and the nettle leaves are thoroughly incorporated.
  3. Strain the Mixture:
    • Place a fine mesh strainer or cheesecloth over a large bowl. Pour the blended mixture through the strainer to remove any pulp and solids, pressing the mixture with a spoon or spatula to extract as much liquid as possible.
  4. Store the Syrup:
    • Transfer the strained syrup into a clean glass jar with a tight-fitting lid. Seal the jar and store it in the refrigerator.

Usage:

  • The syrup can be used as a refreshing drink when mixed with water, soda water, or as a flavoring in teas. You can also drizzle it over desserts, pancakes, or yogurt.

Storage:

  • Since this syrup contains no preservatives and is uncooked, it should be consumed within 1-2 weeks. Always keep it refrigerated and use a clean spoon when serving to avoid contamination.
