Instructions:
- Mix dry ingredients: In a large mixing bowl, combine the old-fashioned oats, dried cranberries, pumpkin seeds, and pumpkin pie spice. Stir until evenly mixed.
- Prepare the wet ingredients: In a separate bowl, mix together the pumpkin puree, nut butter, honey or maple syrup (if using), vanilla extract, and salt until well combined.
- Combine everything: Pour the wet mixture into the bowl with the dry ingredients and stir until everything is well coated. It may take a bit of mixing to evenly distribute.
- Form the bites: Once the mixture is thoroughly combined, use your hands or a spoon to form small bite-sized balls (about 1 to 1.5 inches in diameter). If the mixture is too sticky, refrigerate it for 15 minutes to firm up before forming the bites.
- Chill: Place the bites on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
- Store: Keep the bites in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
