No-Bake Pumpkin Breakfast Bites

Ingredients:

  • 2 cups old-fashioned oats
  • 1/4 cup canned pumpkin puree
  • 1/4 cup dried cranberries (unsweetened if possible)
  • 1/2 cup pumpkin seeds
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup nut butter (almond, peanut, or cashew)
  • 1/4 cup honey or maple syrup (optional for extra sweetness)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Mix dry ingredients: In a large mixing bowl, combine the old-fashioned oats, dried cranberries, pumpkin seeds, and pumpkin pie spice. Stir until evenly mixed.
  2. Prepare the wet ingredients: In a separate bowl, mix together the pumpkin puree, nut butter, honey or maple syrup (if using), vanilla extract, and salt until well combined.
  3. Combine everything: Pour the wet mixture into the bowl with the dry ingredients and stir until everything is well coated. It may take a bit of mixing to evenly distribute.
  4. Form the bites: Once the mixture is thoroughly combined, use your hands or a spoon to form small bite-sized balls (about 1 to 1.5 inches in diameter). If the mixture is too sticky, refrigerate it for 15 minutes to firm up before forming the bites.
  5. Chill: Place the bites on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  6. Store: Keep the bites in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
