No-Sugar Oatmeal Date Bites

Don’t eat sugar! Do you have oatmeal and dates? Prepare this dessert in 5 minutes!

Ingredients:

  • 1 cup rolled oats
  • 1 cup pitted dates
  • 1/4 cup unsweetened coconut flakes (optional)
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 cup nut butter (almond, peanut, or any preferred)
  • A pinch of salt

Instructions:

  1. Blend the Dates: Place the pitted dates in a food processor. Pulse until they form a sticky paste. If your dates are dry, soak them in warm water for 10 minutes and then drain before processing.
  2. Mix Ingredients: In a bowl, combine the date paste, rolled oats, nut butter, and a pinch of salt. If using, add the coconut flakes and cinnamon. Mix until everything is well combined.
  3. Form into Bites: Take small portions of the mixture and roll them into bite-sized balls. If the mixture is too sticky, you can lightly wet your hands with water.
  4. Serve or Store: Enjoy immediately or refrigerate for a firmer texture. Store leftovers in an airtight container in the fridge for up to a week.

These bites are naturally sweetened by dates and packed with fiber from the oats. They make a great quick dessert or snack!
