Oatmeal, Apple, and Carrot Bites

Ingredients:

  • 2 cups (200 g) rolled oats, chopped in a blender
  • 1 teaspoon baking powder
  • 1 cup (240 ml) milk of your choice (almond, soy, dairy, etc.)
  • 1 carrot, grated
  • 9 dried apricots, rinsed with hot water and chopped
  • 4 tablespoons raisins, rinsed with hot water
  • 1 apple, grated

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Oatmeal Base:
    • In a large bowl, combine the chopped oats and baking powder. Mix well to ensure the baking powder is evenly distributed.
  3. Mix Wet Ingredients:
    • Add the milk to the dry ingredients and stir until well combined. The mixture should be thick and slightly sticky.
  4. Add Fruits and Vegetables:
    • Stir in the grated carrot, grated apple, chopped dried apricots, and rinsed raisins. Mix thoroughly to evenly distribute the fruits and vegetables throughout the mixture.
  5. Form the Bites:
    • Using a spoon or your hands, form small balls or bite-sized pieces from the mixture and place them on the prepared baking sheet. Gently flatten each ball slightly with the back of a spoon.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and slightly firm to the touch.
  7. Cool and Serve:
    • Allow the bites to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Storage:

Store the bites in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
