Oil-Free Mayonnaise: Quick, Healthy, and Fresh

Yields: About 1 cup Prep time: 5 minutes

Ingredients:

  • 1/2 block silken tofu (extra-firm works too, but silken is smoother)
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste

Equipment:

  • High-speed blender

Instructions:

  1. Prep your tofu: Drain any excess water from the silken tofu.
  2. Combine ingredients: Place all ingredients into a high-speed blender.
  3. Blend: Blend on high speed until smooth and creamy. This should take about 1-2 minutes. Scrape down the sides of the blender as needed.
  4. Taste and adjust: Taste the mayonnaise and adjust seasonings as desired.

Tips:

  • For a thicker mayonnaise, let it chill in the refrigerator for at least 30 minutes.
  • Experiment with different flavors by adding herbs, spices, or other condiments like hot sauce.
  • Store in an airtight container in the refrigerator for up to a week.
