This vibrant chutney explodes with flavor and health benefits, thanks to the power of drumstick leaves! Inspired by Sadhguru’s Isha recipes, it’s a simple way to add a delightful kick to your meals.
Ingredients:
- 1 cup fresh drumstick leaves, washed and drained
- 2 tbsp cooking oil
- ¼ tsp cumin seeds
- 5-7 red chilies (adjust for spice preference)
- ¼ tsp split Bengal gram (chana dal)
- ¼ tsp split black gram (urad dal)
- ¼ tsp mustard seeds
- 1 marble-sized tamarind piece, soaked in water
- ¼ cup freshly grated coconut
- Salt to taste
- Water (as needed)
Method:
- Spice Symphony: In a pan, dry roast the cumin seeds, red chilies, and dals until fragrant and golden brown. Set aside.
- Moringa Magic: Heat 1 tablespoon of oil in the same pan. Add the mustard seeds and let them splutter. Then, add the drumstick leaves and cook until slightly softened.
- Grind Time: Let the mixture cool slightly. Grind the roasted spices (remove whole chilies if desired) with the sautéed drumstick leaves, tamarind extract, coconut, and salt to a slightly coarse paste.
- Temper for Texture: In a separate pan, heat the remaining oil. Add the ground chutney and cook for a few minutes, adding water as needed to achieve your desired consistency.
