Ingredients:
- 3 cups cooked green peas (fresh or frozen)
- 3 boiled eggs (slice a few for garnish, dice the rest)
- 1/4 cup diced purple onion
- 1 cup mayonnaise (add more if needed)
- Salt & pepper to taste
- Optional: Cooked and chopped bacon (either mix in or sprinkle on top)
Instructions:
- Prepare the Peas: If using frozen peas, cook them according to the package instructions, then drain and let them cool. If using fresh peas, cook them until tender, drain, and cool.
- Boil the Eggs: Boil the eggs, then cool them in cold water. Peel the eggs and slice a few pieces for garnish. Dice the remaining eggs.
- Mix the Ingredients: In a large bowl, combine the cooled peas, diced eggs, and diced purple onion.
- Add Mayonnaise: Stir in the mayonnaise until everything is well-coated. If it seems too dry, add more mayonnaise to reach your desired consistency.
- Season: Add salt and pepper to taste, adjusting as necessary.
- Optional Bacon: If you’re adding bacon, you can either mix it in with the salad or sprinkle it over the top as a garnish.
