Pickled Beets Recipe

Ingredients:

  • 8 medium fresh beets
  • 1 cup vinegar (white or apple cider vinegar)
  • 1/2 cup sugar
  • 1 1/2 teaspoons whole cloves
  • 1 1/2 teaspoons whole allspice
  • 1/2 teaspoon salt

Directions:

  1. Scrub the beets thoroughly and trim the tops to about 1 inch.
  2. Place the beets in a Dutch oven or large pot, and add water until the beets are fully covered.
  3. Bring the water to a boil, then reduce heat. Cover the pot and simmer for 25-30 minutes, or until the beets are tender.
  4. Remove the beets from the water and let them cool. Once cooled, peel and slice them. Set the sliced beets aside in a bowl.
  5. In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring this mixture to a boil and let it boil for 5 minutes.
  6. Pour the hot vinegar mixture over the sliced beets, ensuring they are fully coated. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
  7. Drain the pickled beets before serving.
