Pineapple Skin Drink (Tepache) Recipe

Ingredients:

  • Pineapple peel (from 1 medium pineapple)
  • 1 cup brown sugar (adjust based on your sweetness preference)
  • 4 cups water
  • Optional spices:
    • 1-2 cinnamon sticks
    • 2-3 whole cloves
    • (You can also add ginger for an extra kick!)

Preparation:

  1. Wash the Pineapple Peel:
    Thoroughly rinse the pineapple peel under cold running water to remove any dirt or pesticides.
  2. Combine Ingredients:
    In a large, clean jar (a glass jar works best), add the washed pineapple peel, brown sugar, and any optional spices you choose to use.
  3. Add Water:
    Pour in the water and stir the mixture well until the brown sugar is fully dissolved.
  4. Cover the Jar:
    Cover the jar with a cloth, securing it with a rubber band. This allows air to circulate while keeping dust and insects out.
  5. Ferment:
    Place the jar in a warm spot (like a kitchen counter away from direct sunlight) for 2-3 days. Stir the mixture once a day to help with fermentation.
  6. Strain:
    After 2-3 days, taste the mixture. If it has a pleasant tangy flavor, it’s ready! Strain out the solids using a fine mesh strainer or cheesecloth.
  7. Chill and Enjoy:
    Transfer the strained liquid to a clean bottle or jar, chill in the refrigerator, and enjoy your refreshing Pineapple Skin Drink!

  • Storage: The drink can be stored in the fridge for up to a week.
  • Serve: Serve over ice, or mix with sparkling water for a fizzy treat!
