Ingredients:
- Olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 small pumpkin, peeled and diced
- 2 carrots, diced
- 2 stalks of celery, diced
- Vegetable stock
- Salt and pepper
- Cream (optional, for garnish)
- Fresh herbs like parsley or thyme (for garnish)
Steps:
- Heat Olive Oil: In a large pot, heat a couple of tablespoons of olive oil over medium heat.
- Cook Onion and Garlic: Add the chopped onion and minced garlic. Cook until the onion is soft and golden, about 5 minutes.
- Add Vegetables: Stir in the diced pumpkin, carrots, and celery. Sauté the vegetables for a few minutes, allowing them to coat with the onion and garlic mixture.
- Add Stock and Simmer: Pour in enough vegetable stock to cover the vegetables. Bring to a boil, then reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
- Blend Until Smooth: Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, you can transfer the soup in batches to a blender. If using a blender, return the soup to the pot after blending.
- Season and Add Cream: Season the soup with salt and pepper to taste. If you like, stir in a splash of cream for extra richness.
- Garnish and Serve: Ladle the soup into bowls. Garnish with a swirl of cream and a sprinkle of fresh herbs like parsley or thyme.
Enjoy your warm, comforting pumpkin soup!
